Liam Barker is a freelance chef specialising in Caribbean food cooked over fire. He quit a career in fine dining in London to discover his Caribbean heritage. His signature style infuses live fire and smoke into ancient Caribbean methods and recipes and his goal is to honour native live fire cooking methods, and use them to bring a new depth to Caribbean cooking. Liam hosts full-day BBQ masterclasses where you can learn about the methods he uses as well as serving his food at pop ups and festivals.
