Summer is finally here. OK, so the UK can be a little patchy, but when the sun’s out, you don’t want to be caught out – especially when it comes to coffee. Once upon a time, cold coffee in any form was frowned upon by baristas and coffee connoisseurs. But over the past decade, those same purists have been rethinking things. Cold brew, flash brew, iced, shaken or blended – cooler methods unlock different flavour profiles, offer a smooth, less acidic sip, and lend themselves to endless creativity. Coffee with ice cream? Yes. Coffee cocktails? Absolutely. In fact, recent studies show that nearly one in four UK coffee drinkers now prefer their coffee cold, especially during warmer months.
Don’t get me wrong, I’ll never give up the ritual of a hot morning brew. But having a few delicious summer-ready options up your sleeve keeps things fresh, fun and energising. Nothing says “summer holiday” more than a little ice cream decadence in your coffee! So, whether you're basking in a heatwave or just pretending we’re in one, here are five of my go-to recipes to keep your summer sipping sorted. From iced caramel to a frozen espresso martini. Chill, blend, shake... and enjoy.

Classic iced coffee
I drink iced coffee and cold brew all summer long, I love using this classic recipe as a base and experimenting with serves such as iced matcha latte, iced chai latte and more.

Caramel iced coffee
Add some extra sweetness to your coffee with caramel. I like to use a caramel sauce because I like to see it lined on the glass, but a caramel syrup also works well.

Iced mocha
For those with a sweeter tooth, a mocha is a great gateway into enjoying coffee. I make it iced and even more decadent a scoop of ice cream for a super summery serve.

Cold brew iced affo-latte
Not only does cold brew taste great, but steeping it overnight also saves you time in the morning. Add ice cream and Baileys for an indulgent summer coffee drink.

Frozen espresso martini
This summery coffee cocktail is so simple and so refreshing, and something a little more exciting to serve on a hot day. You can still have that coffee flavour hit or, if it's a balmy night and you don't want the caffeine, try making it with decaf coffee instead.
