This can be made up to a week ahead, provided you keep it nice and cool. Serve as a treat with coffee or as a sweet canapé. It’s frighteningly moreish, and a great one for Christmas Day dessert if you're hosting people who don't like traditional festive puddings

- 500g white chocolatechopped
- 2 tbsp coconut oil or white vegetable fat or crisco
- 60g dried cherries
- 150g red glace cherriesquartered
- 100g blanched almondsroughly chopped
- 100g shelled and peeled pistachiosroughly chopped
- 6 tbsp rice crispies
- 8 large marshmallowssnipped into quarters

Method
step 1
Melt the chocolate and fat together in a microwave or bowl set over a pan of simmering water. Stir in the remaining ingredients. Scoop the mixture into a baking paper-lined 20cm square tin or baking dish (or use a silicone mould).

Leave in a cool place or in the fridge to set. Cut into pieces to serve.
