Caramelised banana and yoghurt fool with amaretti
The easiest ever dessert for entertaining. Caramelised banana and yoghurt make a really light end to a meal and you can put this together in less than 30 minutes
This is a delicious, speedy dessert that is zesty and zingy. Serve with extra ginger biscuits for scooping, if you like

Pour the cream into a large bowl then scatter in the orange zest, juice, ginger and sugar. Whisk to soft peaks, then fold through the yogurt. Fold through 2 tbsp of the marmalade.
Spoon 1 tbsp of the biscuits into the bottom of four serving glasses. Spoon 1 tsp of marmalade on top and a piece of orange, then pour on some of the yogurt mixture. Repeat with all the remaining yogurt, biscuits and orange pieces. Save a piece of orange to decorate and drizzle over a few dots of marmalade.
Serve immediately or leave in the fridge until ready to serve.
