This is essentially a twist on a margarita but with added chilli warmth. You can swap the tequila for mezcal to add extra smoky depth to the cocktail
Put the tequila, red chilli and coriander leaves in a cocktail shaker, and gently muddle using the end of a rolling pin. Add the agave syrup or honey, lime juice and a handful of ice, then shake and strain until the outside of the shaker feels really cold.
Strain into a chunky tumbler glass filled with ice and garnish with a slice of chilli and a coriander sprig.
