Want to make a silky, garlicky aïoli with all of the flavour but none of the faff? Try this super-simple version – we like it served with chips for dunking

- 1 garlic clovecrushed
- juiced to make 2 tbsp lemons
- pinch saffron
- 150g mayonnaise
- 1 tsp Dijon mustard
- lemon juice
Method

Put the garlic in a small bowl with the lemon juice and season with a good pinch of sea salt. Put a pinch of saffron in a serving bowl, add 1 tbsp of just-boiled water and leave for 5 minutes. Add the mayonnaise and mustard to the saffron. Sieve this over the lemon juice, leaving the garlic bits behind. Mix everything together really well.
