A quick, easy and colourful pasta salad of sweet red pepper, crumbled feta and fresh mint is perfect for a summer picnic, a midweek meal or a packed lunch.

- 1 red onionhalved and finely sliced
- 2 tbsp red wine vinegar
- olive oil
- (tiny grain-shaped pasta) 250g orzo
- roasted red peppers from a jar3 sliced
- 1 × 200g block fetacrumbled
- 2 tbsp pine nutstoasted
- a small bunch mintleaves chopped

Method
step 1
Put the onion in a bowl, season really well and toss with the vinegar and 3 tbsp oil. Leave to marinate and soften.
step 2
Cook the orzo in salted boiling water until just tender, then drain and rinse under cold water and drain really well again. Toss with the onion and dressing then gently mix through the rest of the ingredients.
