Creamy garlic prawn pasta recipe

  • 200g linguine
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 garlic clove
    crushed
  • pinch of dried chilli flakes (optional)
  • 125ml white wine
  • 3 tbsp mascarpone, crème fraîche or double cream
  • 200g raw king prawns
    defrosted if frozen
  • 2 tbsp of chopped soft herbs (such as chives, parsley or tarragon, or a mixture)
  • squeeze of lemon juice

Method

  • step 1

    Cook the linguine following pack instructions.

  • step 2

    Meanwhile, heat the butter and oil in a large frying pan over a low heat and cook the garlic and chilli flakes (if using) for 2 mins until fragrant.

    Pour in the wine and simmer for a few minutes until reduced by half then stir in the mascarpone and season well. Add the prawns and cook until pink and cooked through. Stir in the herbs, then tip in the drained linguine and toss together with a splash of the cooking water until saucy and slippery. Finish with a squeeze of lemon juice then serve in warm bowls.
