
Prawn, watermelon and feta salad

- 400g large raw shelled prawnsbutterflied
- 250g green beanstrimmed
- 850g chunk watermelon
- a small bunch mintleaves picked
- 200g pack feta
- to serve flatbread or pitta bread
- 2 tbsp olive oil
- 2 lemonsjuiced
- 1 tsp chilli flakes

Method

Mix the dressing ingredients with a little salt and pepper, then sprinkle 1 tbsp of it over the prawns, toss together and leave to marinate for 15 minutes.

Bring a pan of salted water to the boil, throw in the green beans and cook for about 2-3 minutes, or until just tender. Drain, then plunge into ice-cold water to cool the beans completely before draining again. Pat dry with kitchen towel.

Cut away the skin and white flesh of the watermelon then cut into cubes. Put in a bowl with the green beans, then roughly tear in the mint leaves and crumble over the feta.

Heat a frying pan or griddle until really hot, and fry the prawns in batches until they turn pink. Add the prawns to the rest of the salad ingredients, drizzle over the remaining dressing and very gently toss together before serving with warm flatbreads or toasted pitta.
