An easy salmon dish. Make more of oily fish with this simple supper. Orzo is a short-style pasta that is cut into a rice-like shapes. Easy to cook, it takes on the flavours of lemon and basil well in this midweek meal for two that works a treat with the oily fish.

- 100g orzo
- 2 skinless fillets salmon
- 1 tbsp plain flourseasoned well
- butter
- olive oil
- ½ lemonzest and juice
- ½ a small bunch basilshredded

Method
step 1
Cook the orzo following pack instructions. Dust the salmon with seasoned flour then fry in a little butter and olive oil until golden, about 4 minutes. Turn and cook on the other side for another 2 minutes.

Drain the orzo then toss with a large knob of butter, the zest, juice and the basil. Season and serve with the salmon.
