
Salt-crusted Jersey Royals with crab and chilli dip

These make a great starter or snack to serve with drinks. They are salty as you’d expect, so don’t cut any of the potato up as they will absorb more salt.

- 400g small Jersey Royalswhole
- 100g white crab meat
- 6 cherry tomatoesfinely chopped

Method
step 1
Put the potatoes in a single layer in a deep frying pan with 2 tbsp salt and enough water to cover them, then bring to a simmer and keep cooking for about 30-40 minutes, or until the water has evaporated. (Roll the potatoes around occasionally to make sure they’re cooked throughout.)

Mix the crab meat with the remaining ingredients and add enough oil to make it spoonable. Serve the potatoes in a pile and give each person a small bowl of the dip.
