Sriracha, a spicy, garlicky Thai chilli sauce, is popping up all over menus on anything from breakfast dishes to burgers. This punchy blend of rich mayo and sriracha from Brooklyn’s Empire Mayonnaise Co, available from M&S, is great for simple dipping and also transforms a crab club sandwich into the stuff of dreams.

- 6 slices good white sliced bread
- 100g white crab meat
- 2 tbsp Empire sriracha mayonnaiseplus extra for spreading
- 1 tbsp corianderfinely chopped
- cut into ribbons with a potato peeler cucumber
- 4 ripe tomatoessliced
- a few leaves frilly lettuce

Step 1
Toast the bread on both sides. Mix together the crab, mayo and coriander, and season.

Spread 2 slices of the toast with more sriracha mayo and add a layer of tomato, then cucumber.

Top with another slice of toast then spread over the crab mix and top with frilly lettuce.Add the last layer of toast, secure with cocktail sticks and cut into quarters to serve.
