Try this refreshing summery dessert to impress. If you can get your hands on Worcester Pearmain apples, when they are in season use them as they are great for juicing

- 2 tbsp sugar
- a small bunch mint
- 6-8 applesquartered and juiced to make 850ml
- ½ lemonjuiced

Method
step 1
Put the sugar in a small pan with 150ml water. Heat until the sugar has dissolved then add the mint. Leave to infuse for 20 minutes. Strain and add to the apple and lemon juice.

Pour into an ice-cream maker and churn to a sorbet consistency.
