This recipe for Texan chilli is true to the traditional style, using stewing steak instead of mince and leaving out kidney beans. Combined with the spices, it makes for a really hearty meal, and the extras of cheddar, soured cream and tortilla chips make it even better. It takes a little while to make, but it's worth it

- 500g stewing steakcut into small pieces
- 2 large onionschopped
- 2 cloves garliccrushed
- 300ml chicken stock
- ½ tsp hot smoked paprika
- 2 tsp oregano
- 2 tsp ground cumin
- 1½ tbsp medium chilli powder
- 2 tbsp tomato purée
- 2 tsp brown sugar
- to serve soured cream or grated cheddar or lime wedges or tortilla chips

Method
step 1
Heat a tbsp oil in a pan then season the meat and brown all over in a pan. Add the onion, garlic and chicken stock, cover and simmer for 1 hour.

Add the paprika, oregano, cumin, chilli powder, tomato purée, and sugar. Stir then simmer for another hour or until the meat is very tender and the sauce thickened. Serve the chilli in bowls with the accompaniments.
