  • 1 onion
    finely chopped
  • 2 chicken breasts
    cut into pieces
  • mild curry powder or S&B Japanese curry roux
  • 2 tsp cornflour
  • 300ml strong chicken stock
  • 100g green beans
    halved and blanched
  • 2 portions (either dried or ready to use) udon noodles

Method

  • step 1

    Fry the onion in a lit tle oil until it softens, then add the chicken and fry until it cooks through. Add the curry powder (or crumbled block) and cornflour and stir for 1 minute, then stir in the stock and simmer everything together. Stir in the green beans.

  • step 2

    Cook the udon noodles or rinse ready-cooked noodles in boiling water to warm them up. Divide between two bowls and spoon over the curry.
