
Turkey tikka burgers with light coronation slaw
Check out these punchy Turkey tikka burgers with a light yet creamy coronation slaw. These easy burgers are simple to make and are packed with plenty of flavour. Ginger and garlic pastes are available in jars from most supermarkets, and are a good standby for quick meals
- 400g turkey breast mince
- 1 tsp ginger paste
- 1 tsp garlic paste
- 1 tsp smoked paprika
- 1 tsp chilli powder
- 1 tsp ground coriander
- vegetable oil
- 2 Little Gem lettuces
SLAW
- 100ml low-fat natural yogurt
- 1 lemonjuiced
- 2 tsp mild curry powder
- 1/4 white cabbagethinly sliced
- 1/2 red onionthinly sliced
- 1 carrotgrated
- sultanasa handful

Method
step 1
Put the turkey mince, ginger and garlic pastes, paprika, chilli powder and ground coriander in a bowl, season and mix well. Form into 9 burgers and chill for 20 minutes.

For the slaw, whisk together the yogurt, lemon juice and curry powder, and season.

Mix in the cabbage, onion, carrot and sultanas.

Heat 1 tbsp vegetable oil in a large frying pan, rolling the pan to coat well.

Add the burgers and fry gently for 5 minutes on each side, until caramelised and cooked through.
step 6
Serve with lettuce ‘buns’ piled high with slaw.
