This super-easy vegetarian pasta sauce couldn't be more simple. Just mix marinated artichokes from a jar with lemon juice and parmesan, then tip in hot cooked pasta and toss together. Ready in the time it takes to set the table!

- 100g marinated artichoke heartsdrained and sliced
- 1 lemonjuiced and zested

Method

Cook the spaghetti following pack instructions. Put the rest of the ingredients in a large bowl with 1 tbsp olive oil, season really well and mix. Drain the pasta, keep 2 tbsp of the cooking water, then toss everything together.
