This recipe for one-pan green chilli eggs with chorizo is really easy and just takes 15 minutes to make - perfect for a speedy meal for one

- 4 mini-chorizo sausagesroughly chopped
- 2 eggs
- 1 green chillidiced
- a handful coriander
- 2 slices crusty breadtoasted and buttered
- to serve hot sauce

Method
step 1
Heat the olive oil in a small/medium pan (that will fit 2 eggs). Fry the chorizo until crisp then crack in the eggs and scatter over the chilli. Cook gently until the whites are set but the yolks are still runny. Scatter over coriander. Serve with buttered toast and hot sauce.
