These quick halloumi flatbreads with harissa dressing are easy to make, ready in under 30 minutes and vegetarian - perfect for a midweek meal

- 4 Middle Eastern flatbreads
- 1 block halloumisliced
- 4-6 tbsp hummus
- ½ cucumberhalved and thinly sliced
- 2 tbsp harissa
- 2 tbsp runny honey
- 1 lemonjuiced
- a handful flat-leaf parsleyfinely chopped

Method
step 1
Warm the flatbreads in the oven. Whisk the dressing ingredients together. Grill or fry the halloumi until golden. Spread hummus over the flatbreads then top with halloumi, cucumber and a good drizzle of dressing. Roll up and eat.
