- 150g rigatoni
- olive oil
- 1 clove garliccrushed
- 1 red chillifinely chopped (optional)
- 2 courgettesgrated
- 1 lemonjuiced and zested
- (or vegetarian alternative) 30g parmesangrated

Method
step 1
Cook the pasta following the packet instructions. Drain, keeping back 2 tbsp of the cooking liquid.

Heat 2 tbsp olive oil in a frying pan and add the garlic and chilli and cook for a minute. Add the courgettes and fry for 5-6 minutes until softened. Stir through the lemon juice and zest.

Toss the pasta with the courgette, parmesan and pasta cooking liquid and serve.
