A lovely and easy after work pasta dish that pairs herby sausages with sweet butternut squash, fresh herbs and linguine to make a substantial meal. The chilli oil is optional but adds a spiciness that cuts the sweetness if you like things hot.

- 4-6 sausagesskins removed and cut into chunks (choose good quality sausages with lots of seasoning)
- 250g butternut squashpeeled and cut into small cubes
- ½ onionchopped
- a small handful parsleychopped
- a small handful basilchopped
- to serve (optional) chilli oil
- 200g linguinecooked

Method
step 1
Fry the onion, butternut squash and sausage pieces together in a little oil for about 10 minutes or until cooked. Toss through the linguine along with the herbs and lots of seasoning. Add chilli oil if you like.
