Bright green herbs pair with red chilli to create a zingy sauce for drizzling over steaks, roasted vegetables and fresh salads

- 2 long shallotsroughly chopped
- 1 clove garlic
- 1 red chilliroughly chopped
- a small bunch corianderleaves picked
- a small bunch flat-leaf parsleyleaves picked
- a handful of leaves oregano
- 4 tbsp red wine vinegar
- 5 tbsp olive oil
Method
step 1
Tip the shallots into a small food processor, then peel the garlic and add it along with the red chilli. Pulse until finely chopped.
step 2
Add the coriander, parsley, oregano, red wine vinegar and olive oil. Season and pulse again until the mixture is saucy, then serve.
