Aubergine and halloumi burgers
Make the most of aubergines by deep-frying in breadcrumbs until crisp and golden before stuffing in a burger bun with grilled halloumi and harissa mayo. Our veggie aubergine burgers are perfect for entertaining.

Heat the oven to 200C/180C fan/gas 6. Put the grapes in a small baking dish and drizzle with the vinegar, oil and honey. Sprinkle over the chilli flakes and thyme, and toss everything together.
Roast for 15-20 mins until the grapes just start to burst. Meanwhile, fry the halloumi slices in a dry non-stick pan until golden on both sides.
Arrange the rocket on a small platter, top with the halloumi and spoon over the grapes and any juices from the dish. Serve with flatbreads.
