Halloumi with honey roasted grapes and thyme recipe

  • 200g black or red grapes
    (or a mixture)
  • 2 tsp sherry vinegar
  • 2 tsp olive oil
  • 1 tbsp honey
  • pinch of chilli flakes
  • 2 thyme sprigs
    leaves picked
  • 250g halloumi
    sliced
  • 2 handfuls of rocket
  • flatbreads
    to serve

Method

  • step 1

    Heat the oven to 200C/180C fan/gas 6. Put the grapes in a small baking dish and drizzle with the vinegar, oil and honey. Sprinkle over the chilli flakes and thyme, and toss everything together.

  • step 2

    Roast for 15-20 mins until the grapes just start to burst. Meanwhile, fry the halloumi slices in a dry non-stick pan until golden on both sides.

  • step 3

    Arrange the rocket on a small platter, top with the halloumi and spoon over the grapes and any juices from the dish. Serve with flatbreads.
