There are few things better than a perfectly made tarte tatin — beautifully caramelised, golden fruit sitting atop flaky puff pastry, with a scoop of vanilla ice cream.

You can make the dish traditionally using apples, or go off the beaten path using apricots, pears or even a savoury twist with beetroot or tomatoes to create a delicious balance of sweet and savoury.

The key to making a tarte tatin is using the correct type of tin where you can easily make a caramel, and turn out the tart without burning yourself, or any of your hard work ending up on the floor. Read on for our choice of the best tarte tatin tins, tried and tested.

Le Creuset cast iron tatin tin

Le Creuset cast iron tatin tin

Best tarte tatin tin

Star rating: 5/5

You might know Le Creuset for its enamelled cast iron casserole dishes, but the brand also has a wide range of top performing cookware. This tin is also made from enamelled cast iron and is specifically designed for tarte tatins, although it could certainly be used for other recipes. It looks eye-catching with curving handles which make turning the tart out a breeze.

Since the tin is cast iron, it conducts heat really well which means our caramel cooked quickly, without any cool spots. The tin is deep enough to easily fit our apple halves without any problems and the caramel didn't bubble over in the oven at all. When it came to turning out our tart, it's pretty weighty thanks to the cast iron, but the enamel worked effectively as a non-stick. If you want to invest in a high quality and versatile tin for tarte tatin and beyond that will last a lifetime, this is a perfect option.

Staub Specialities 20cm round cast iron oven dish

Staub Specialities 20cm round cast iron oven dish

Best cast iron tarte tatin tin

Star rating: 4.5/5

While this isn't a specifically designed tarte tatin tin, the round cast iron pan is the perfect shape with curved handles which makes turning out the tart a breeze. The cast iron is brilliantly made without any cool spots, although we did find the dark interior of the dish made it tricky to tell how far along our caramel was, which could lead to it burning.

The main factor that held this tin back from getting five stars is that the largest size it comes in is 20cm, which will only make a large enough tart for four people – some of our tarte tatin recipes suggest a tin of 25cm.

Mauviel M'Passion tarte tatin 24cm tin

Mauviel M'Passion tarte tatin 24cm tin

Best copper tarte tatin tin

Star rating: 4.5/5

Made from copper and lined with tin, this dish impressed us hugely on test. It looks beautiful thanks to the copper, with the tin interior providing a pale backdrop so you can check on the progress of your caramel with ease. There's a good level of depth too which easily fits the halves on large apples, and the ears on each side on the tin work perfectly for turning out the tart, which was also made easy by the fact that this tin is far lighter than the other cast iron models on this list.

The tin is certainly versatile for use beyond tarte tatin since it can be used on the hob or in the oven, and would look beautiful on the table when serving. It comes with an induction plate so it can be used on all hob types, which is also a super useful piece of kitchen kit. This tin is pricier than most, but the versatility and functionality makes it worth it.

What can I use instead of a tarte tatin tin?

You don't need to use a specific tin for making a tarte tatin, however there are a few factors you need to be aware of. You need a tin, pan or dish that can be used on the hob top and in the oven, and is deep enough to fit your fruit with room at the top for the pastry to rise without the caramel bubbling over in the oven.

Since you'll be making caramel in the pan, you'll need a good conductor of heat like cast iron or copper so the sugar melts evenly. You'll also want to think about the interior of the pan you're using — avoid traditional non-stick coatings since they can't handle the heat of caramel, and ideally you want the pan to have a light interior so you can see how the caramel is progressing.

Lastly, consider how easy its going to be to turn out the tart. You can make a tarte tatin in an uncoated frying pan, but it's going to be tricky to turn out unless it has a second handle.

How we test tarte tatin tins

To test these tarte tatin tins, we made a classic apple tarte tatin, and all the tins were tested against strict criteria in olive's test kitchen. There are three crucial steps to making a tarte tatin — making a caramel, baking the apples and pastry in the oven and turning out the tart to display the bronzed apples with the pastry underneath.

There are a few criteria we score the tins against including:

  • Appearance of final bake: we wanted to see golden caramelised apples with soft fruit, and crisp, puffed up pastry.
  • Ease of use: useful features, like handles that made the tart easy to turn out, were a plus. We also looked for details that may make using the tin more difficult, for example, a dark interior which makes it tricky to make a caramel.
  • Quality of design features: we tested a variety of tins, made from cast iron and copper. We looked for useful elements that made the tins versatile, plus design features that made the final tart easy to remove.
  • Value for money: we wanted to ensure that the design features, quality of the tin and additional details aligned with the price.
